Pork With Mrs Darlington’s Sweet Apple Chutney

Heat the oven to 200 degs fan


 A delicious meal, easy as a mid week supper yet still impressive to enjoy as a weekend meal with a glass of wine and friends.

Four pork chops

Salt & pepper

1 tablespoon of vegetable oil

8 potatoes, thickly sliced

1 onion sliced

For the sauce

Half a jar of Mrs Darlington's Sweet Apple Chutney

2 tables spoons of tomato puree

1 tablespoon of sugar

1 tablespoon of Mrs Darlington's Wholegrain Mustard

250ml red wine

250 ml beef stock

 

Flat leaf parsley to garnish

 

METHOD TO SUCCESS

Season the meat. Grease a large baking dish with the oil and spread with the sliced potatoes. Place the pork chops on top, followed by the sliced onion. Mix all the sauce ingredients together and pour over the meat, onions and potatoes. Cover with foil and cook for 30 minutes. Remove the foil and cook for another 30 minutes. Serve with a selection of seasonal vegetables and garnish with flat leaf parsley.

If you are short of time, make the sauce ingredients the day before. Keep it in the fridge until needed and this dish will be even more quicker to prepare. Perfect!!
