Mrs Darlington’s Lemon Curd Bread & Butter Pudding

Pre heat the oven to 175 degrees.

Preparation time 10 minutes plus an additional 20 minutes resting before cooking.


An all time classic with a delicious zesty twist. Sure to be a family favourite.

3 eggs

3 tbspn caster sugar

16fl oz/480ml milk

16fl oz/480ml double cream

half tsp vanilla extract

6 large croissants

2oz/50g butter

2/3 jar Mrs Darlington's Legendary Lemon Curd

Demerara sugar to sprinkle on the top

 

METHOD TO SUCCESS

Whisk the eggs, caster sugar, milk, cream and vanilla extract in a large bowl. Slice the croissants in half, butter and then smother with Mrs Darlington's Lemcon Curd. Arrange the croissants in an oven proof dish ensuring the top of the croissants are facing up. Pour over the egg mixture and then sprinke over some demerara sugar. Leave to stand for approximately 20 minutes to allow the egg mixture to soak into the croissants.

Bake for approximately 30 minutes at 175 degrees or until the egg mixture is set.

Serve with cream or warm, fresh custard.
