Thai Sweet Chilli Drumsticks
Heat the oven to 200C/180C
Line a baking tray with kitchen foil
A very quick and easy way to add delicious flavours to chicken. Great with salad and rice or even cooked on the BBQ.
2 tbsp of Mrs Darlington's Sweet Chilli Relish
Grated zest of 1 orange, plus 2 tbsp orange juice
1 garlic clove, crushed
1 tbsp thai red curry paste
8 chicken drumsticks, skin removed
Method to Success
Mix the Mrs Darlington’s Sweet Chilli Relish with the orange juice, orange zest, garlic and curry paste.
Score the chicken flesh several times on each drumstick and then add to the rest of the ingredients.
Ensure the chicken is coated really well.
Place the drumsticks on the foil, evenly spaced.
Cook for 35-40 mins, (coat the chicken with any left over marinade half way through the cooking process)
